Oh, and something I forgot from very much earlier. Someone was mentioning sea aquari(-ums? i-). A place that has spectacular sea critter observing (I don't know about getting them home, though) without the need for scuba or snorkel is Puerto Penasco, Sonora. At the top of the Sea of Cortez, it has some of the highest tides in the world. Ancient lava fields go down to the tide line, and when the tide goes out, the lava basins are filled with all kinds of things.

Penasco is hard to get to, though. There's an airport, but no scheduled service. Have to drive in or be picked up at the border. Perfect for the more reclusive types who have the means to get there efficiently if not cheaply. But it's also the closest beach to PHX, which means there's lots of gringos and places to put them, too.
