My personal preference is to avoid though traders do stagger their lunch hours.

The usual lunch hours from 12 - 1 pm like everyone else. Not too sure which country you are in but you will need to convert to your own local time.

What is the spread width for EUR/USD and USJ/JPN?

Is there a broker that is only 1 pip spread?

Look inside the Custom Indicators, Bands.
You can set any decimal points value (even 4 decimal!) to deviations.
20 - 1.5 = Period / Deviations

Bollinger band settings under indicators on your platform. Set to 20 period and 1.5 deviation.
