1. Exits are planned based on your overall system, so other's methods, while instructive, may not help you with your system/style of trading;
2. Same applies here re percentage. You have to take what the market will give, not what you want to make. This likely will be set/based on variables the market provides like daily range, etc.
3. Risk and SL will depend on time in market per trade, system used, position size, risk tolerance, and account size. So you could research a bit more on this subject online and approach this subject again with precise questions (in the appropriate thread) and you likely will get some excellent answers.
