That's quite a valid question.
I wouldn't know a good answer to it, but I think it has to do with who - buyers or sellers - are taking the initiative. My own understanding of this is: To distinguish between these concepts of 'buying volume' vs 'selling volume', I would ask myself how much volume was involved with either making the price move up or move down.
You could try googling on footprint charts.

hdn to add to Kette's post the last two (2) numbers on each row are for non-forex pairs e.g XAUUSD etc... So treat them the same as you would do with the forex pairs.
