I saw it once, something that takes a positive value of a variable and change it to negative (and vice versa).
who can help?

To switch between positive and negative values, just multiply the value by -1.

Example:

2 X -1 = -2
-2 X -1 = 2

14.35 X -1 = -14.35
-14.35 X -1 = 14.35

etc.

Exactly the same. That code will reverse the sign.
-3 becomes +3
+3 becomes -3

No, you only need to do it once.

So if you write:
Inserted Code
   int MyVariable = 3;

The value of MyVariable will be +3 until you change it.

If you then write:
Inserted Code
   MyVariable = -MyVariable;
The value of MyVariable gets changed to -3.
MyVariable will remain -3 until you change it again.

If you don't want to change the value, but just temporarily use it with a reversed sign you can also do so.
Inserted Code
   int MyVariable = 3;
   int MyOtherVar = -MyVariable;
In this case, MyVariable is +3 and MyOtherVar is -3

if for exemple:

int Variable=3;
Variable= -Variable;
and later I want to assign another value to "Variable":
Variable=5;
will it be "-5", or the past is forgotten?

If you assign Variable = 5, it will remain +5 until you change it. The code won't reverse the sign again unless you tell it to - it's a once only event.
