With Christmas and the new year coming up, I was wondering when would be the best dates to start and end my break from trading.

It depends on your trading system. If your trading system "likes" slow market then it is probably better to trade when other people are having rest and vice versa.
Think twice before going live, even if you own the best trading strategy...
