Hello. Wgat is the best time for take Open/Close prices for daily pivot points? So far I found that 5pm EST or 8pm EST. Thank you.

Try 12 midnight Eastern Standard Time to 12 midnight Eastern Standard Time the previous day.

This is the standard 24 hour set up point for two forex courses I took.
