MT4 Demo, Questions on time zone and start of week

I noticed in my demo MT4 chart that the start of the new week seems to start at GMT 0:00, which misses the first 2 hours of the week doesn't it? I wondered why my chart wasn't moving right now (half an hour into Sunday's start) and I scrolled back to last Sunday to find it didn't have the first 2 hours. Why is that?

And since I'm in GMT -5, am I stuck converting the GMT in my head from MT4 or is there a way to change my time zone?

You cannot change your time. Search for these questions in the search feature and you will find your answers quicker.
