Do you know if exchanges like NYSE or Nasdaq have an over night limit up and down? Is there a maximum gap that can be formed if I keep position over night? Or the maximum gap is unlimited? How about other exchanges from Europe?

Did you try looking on the NYSE website to see if they specify conditions for suspending trading.
They (NYSE) will not be able to control the gap, only suspend when panic sets in.
So if you are wondering what the biggest risk exposure is, well suppose the Ukraine lobs a nuke into the Crimea.........
